1 t baking soda
1 t baking powder
1/2 t salt
3 bananas mashed
1/2 white sugar
1 egg yolk
1/3 butter melted
1. Mix the dry ingredients.
2. Use a electric beater to mash banana until very very smooth.
3. Combine banana, sugar, egg, butter. Mix well.
4. Fold in dry mixture and mix until smooth. But don't over mix.
5. Scoop into muffin pan.
350 F, 22 minutes.
They will come out with little brown thin banana fiber, soft on the inside. I usually use brown sugar instead of white sugar. I think brown sugar will change the taste a bit.
We brought this to our skiing trip.
